Baked Curried Rice

INGREDIENTS:

1 tbsp. olive oil
1 med. minced onion
1/4 tsp. minced garlic
1 c. long grain rice
1 tbsp. curry powder
2 c. chicken broth
1/4 c. dried parsley
1/2 by leaf
1 1/2 tbsp. butter

DIRECTIONS:

Heat oven to 400 degrees. Saute onion, garlic and rice in oil until translucent. Add curry, broth, parsley and bay leaf. Place in a tightly covered casserole dish and bake for 17 minutes. Remove from oven, stir in butter with fork. Remove bay leaf and serve.
