INGREDIENTS:
4 large Potatoes
1 Green Chili chopped
1 tsp Garlic finely chopped
1/2 tsp Mint leaves finely chopped (optional)
3 tsp Coriander leaves finely chopped
1/2 tsp Turmeric powder
1 tsp Chilli powder
1/2 tsp Coriander powder
1/2 tsp Cumin powder
1-1/2 tsp Lemon Juice
Salt to taste
4 tbsp Oil
DIRECTIONS:
Peel the potatoes with the peeler & chop them into thin pieces. Soak them in the water as soon as you chop them.
Heat the oil in a skillet or a heavy saucepan. Add chopped garlic & chilli, stirfry for ½ minute.
Add potatoes & salt. Stir well & cook for 5 minutes. Stir often so that potatoes are cooked evenly.
Add turmeric, chilli powder, coriander & cumin powder, lemon juice & stir well.
Add mint & coriander leaves stir gently. Cook for 2 to 3 minutes or till oil separated.
Garnish with freshly grated coconut.
Serve hot with Puris, Rotis, Bread or Curd Rice
