INGREDIENTS:
1 1/2 teaspoon superfine (caster) sugar
3/4 teaspoon salt
1 tablespoon vegetable oil
1 3/4 teaspoon baking powder
1 egg (lightly beaten)
3 cups maida flour
3/4 cup plain (natural) yogurt
DIRECTIONS:
Blend flour in a mixing bowl or food processor with baking powder, sugar and salt. Add the yogurt, oil and egg.
Mix thoroughly to make a smooth, soft dough. Knead lightly for about 5 minutes. Wrap dough in plastic wrap; set aside in a warm place for at least 3 1/2 hours.
Divide into equal pieces and use wet hands to stretch and pull each piece into a triangular shape. Wet one side of each bread, stick onto the inside wall of the tandoori oven and cook until done, or place on a pre-heated baking sheet and bake at 400 F (200 C) until puffed and browned on the surface.
Remove and wrap in a cloth until ready to serve.
