Indian Peanut Dip

INGREDIENTS:

1/2 c. smooth peanut butter (preferably natural)
1/4 c. minced onion
1/4 c. lemon juice
1 tbsp. soy sauce
2 tsp. minced garlic
1 tsp. ground coriander
1/4 c. minced parsley

DIRECTIONS:

Combine all ingredients in a blender or food processor for 1 minute. Serve at room temperature as a dip for crisp, raw vegetables. Makes 1 cup.
