Indian Peanut Dip

INGREDIENTS:

1 c. smooth natural peanut butter
1/2 c. onion, minced
1/4 c. fresh lemon juice
1 tbsp. soy sauce
1/2 tsp. garlic, minced (or 1/4 tsp. garlic powder)
1 tsp. ground coriander
1/4 c. fresh parsley, minced
Fresh broccoli florets
Celery strips 1″ long

DIRECTIONS:

In a blender or food processor, combine first seven ingredients and blend about 1 minute or until well mixed. Serve the dip at room temperature with the broccoli and celery. Makes about 1 1/2 cups.
