Low fat Quickie curry

INGREDIENTS:

1 teaspoon olive oil
1 onion, chopped
1 large carrot, chopped finely
1 medium potato, cut into chunks
250gm diced lamb
hot curry paste or powder
salt, cracked pepper, mixed herbs
milk

DIRECTIONS:

heat the oil in a large wok. Add the onion, carrott and potato. Partially cook the veges, for about 5 mins. Brown the lamb with the veges. DRAIN THE FAT. Add salt, herbs, cracked pepper etc. Mix the curry paste with the milk, add to the wok and turn down the heat when the curry starts bubbling. Simmer for another ten minutes.
