Mashed Sweet Potatoes by Jean Carper

INGREDIENTS

* 2 1/2 pounds sweet potatoes
* 3 tablespoons Amaretto (almond liqueur) or maple syrup
* Cinnamon, to taste
* Ginger, to taste
* 1/4 cup toasted almonds

DIRECTIONS

1. Microwave whole potatoes until done. Cool to touch. Remove pulp. Mash with liqueur and spices. Top with almonds. Reheat in microwave.
